Erythrit belongs to the group of sugar alcohols or sugar substitutes and is designated E968. Erythrit is obtained through the fermentation of glucose. The result: a sweetener that is nearly calorie-free, consists of 100% carbohydrates, and looks and sweetens like fine sugar. It's no wonder that erythrit is one of the most popular sugar alternatives.
Erythrit is generally very well tolerated and can only have a laxative effect starting from a dose of 70 grams per day. This makes it one of the most digestible sugar alcohols – many other representatives of this group become noticeable at much smaller amounts.
Due to its low calorie count, erythrit is ideal for a low-carb diet. Anyone looking to save calories or reduce their sugar intake makes a good choice with erythrit – the sweetness remains, while the calories almost completely disappear.
The taste is similar to sugar. In larger amounts, undesirable off-flavors can occur – a slightly cooling effect on the tongue is typical. However, in normal dosages, erythrit tastes pleasantly neutral and sweet.
The sweetness of erythrit is half as strong as that of regular table sugar. For the same sweetness, you will need to use a bit more – or you can opt for ready-made mixtures with stevia that achieve the sweetness of sugar.
Erythrit is used in desserts, cakes, pastries, candies, and chewing gums and is often combined with stevia – the combination balances the slightly bitter aftertaste of stevia and simultaneously increases the sweetness. Erythrit also works well in coffee, tea, yogurt, or muesli and can be used just like regular sugar.
