The sugar substitute Stevia is derived from the stevia plant (Stevia rebaudiana bertoni). The leaves contain sweet-tasting plant compounds known as steviol glycosides. Stevia is calorie-free and is designated as E 960. The plant originally comes from South America, where its leaves have traditionally been used to sweeten foods and beverages – today, Stevia is also a popular alternative to household sugar.
Stevia is generally well tolerated, but it is important to enjoy it in moderation. In excessive amounts, Stevia can disrupt the microbial balance of the gut flora. Those who take their time will quickly find the amount that suits their well-being.
Stevia is ideal for a low-carb diet and various dietary forms. Since it is calorie-free, you can sweeten without adding extra calories – a clear advantage over sugar.
Stevia has a slightly bitter aftertaste. However, this is hardly noticeable due to the common combination with erythritol or maltitol. Such mixtures combine the high sweetness of Stevia with the sugar-like taste of sugar alcohols.
The sweetness of Stevia is significantly higher than that of household sugar. Even tiny amounts are sufficient to sweeten foods and beverages – you should dose it sparingly.
Stevia is often used in baking and cooking. When using pure Stevia, attention must be paid to the dosage, as otherwise the aftertaste can become too strong. Also note: sugar adds volume and texture when baking – pure Stevia does not replace these properties, which is why ready-made mixtures with erythritol are often the more practical choice for cakes and pastries.
