Isomalt belongs to the group of carbohydrates. The sugar substitute is a mixture of two sugar alcohols and is derived from sucrose (cane sugar). With about half the calories compared to regular sugar, Isomalt is a popular alternative for those who want to sweeten more consciously. In the ingredient list, it is labeled E953.
Isomalt is generally well tolerated, but excessive consumption can have a laxative effect. This applies to most sugar alcohols: enjoyed in typical amounts, they are unproblematic, while very large portions can stimulate digestion. So it's best to gradually find your personal comfort amount.
Isomalt should be used in a 1:1 ratio like regular sugar. This makes the transition particularly easy: you can use your usual recipes without needing to recalculate.
Isomalt tastes just as natural as regular sugar – without a bitter or artificial aftertaste. This is why it is often used in confections where a pure, clear sugar flavor is desired.
Isomalt has half the sweetness of regular sugar. If you like it particularly sweet, you can easily combine Isomalt with more intense sweeteners like Stevia – this way, you achieve the usual sweetness with fewer calories.
Isomalt is commonly used in confections such as gum, desserts, ice cream, chocolate, or candies. Because it is easy to process and absorbs very little moisture, it is especially a classic in hard candies and lollipops – many sugar-free candies & lollipops owe their pleasant sweetness and long-lasting enjoyment to Isomalt.
